A deep dive into laminated dough for flaky, golden pastries.
You’ll make:
• Croissant dough from start to finish
• Butter block + precise folds
• Shaping croissants and pain au chocolat
Day 1: 2 hours (mixing & laminating)-Friday, Jan. 30th
Day 2: 4 hours (final turns, shaping, proofing, baking)- Saturday, Jan. 31st
